Fresh & Frozen Chile

The Green Chile Harvest begins in August and runs until the first frost of the year (usually in October). After Harvest, green chile must be roasted. This is done by blistering and removing the skin in our roaster. If you care to roast it yourself it can also be done in the broiler of an oven or even outside on a grill. Afterwards, chile can be frozen to enjoy all year-round.
