We’ve been in Albuquerque for going on 30 years and never knew about these until last weekend. David at Chile Traditions turned us on to Barker’s x-hot green chile. How hot? About 30,000 Scovilles. That compares to the average jalapeno, at around 5,000! We kept some out to take home and threw them on the grill over mesquite charcoal. Then we made up some fresh salsa, and dipped warm chicharrones (fried pork rinds). The result was a sweet-smoky-hot aroma and flavor we’d never experienced before. Awesome!
