A CUSTOMER SHARED HER CALABACITAS RECIPE…One of our loyal customers sent us her favorite way to prepare New Mexican squash casserole using Certified fresh Hatch chile from Chile Traditions: “Slice zucchini and yellow squash, chop onion finely, peel and slic fresh Hatch green chile (flavor and heat level to taste). Sautee the mixture with fresh garlic or garlic powder in a cast iron or red copper pan suitable for oven use. Sprinkle with sharp cheddar or 4-cheese Mexican blend.
